Lecithin is a naturally occurring substance found in the membranes of living cells. It is made up of both lipophilic (oil-friendly) and hydrophilic (water-friendly) lipids, making it an excellent emulsifier and a functional powerhouse. Beyond emulsification, lecithin acts as a dough improver, viscosity modifier, release agent and instantizing agent with usage across nearly every food and beverage category.
