Organic soy lecithin is a translucent, yellowish-brown, viscous liquid used across the food, beverage and personal care industries as an emulsifier, wetting agent, stabilizer, instantizing agent, release agent, lubricant, antioxidant and dispersant. It has a milder flavor, and can often be used in smaller quantities than sunflower lecithin.
Lecithin is a powerful emulsifier in applications like salad dressings, vegan spreads, nut milk alternatives and bodycare products to help prevent separation. It is also used in pan sprays, chewing gum and frozen dough systems.
Conventional identity preserved and monitored (IPM) liquid soy lecithin produced from non-GMO (non-organic) soybeans is also available.
