Film Forming Properties of Tapioca Syrup
In this video, we highlight how CIRANDA’s tapioca syrups behave in film formation based on their dextrose equivalent (DE) levels. Low-DE syrups like DE27 form a stable, tacky film, making them ideal for applications that require structure and coating. Higher DE syrups lack these film-forming properties, producing weaker or incomplete films. Our reduced sugar syrup, RS18, also shows strong film-forming behavior while supporting sugar reduction goals.
